Vegan Chocolate Cake

This recipe was found among the Wilson family. We do not know where it came from, however, this recipe is wonderful. And vegan.

They call it Crazy Cake.

Preheat oven to 350 degrees.
In a 9x9 pan mix the following:
1 1/2 cups flour
1 cup sugar
3 tablespoons of cocoa (unsweetened)
1 teaspoon of baking soda
1 teaspoon of salt

Mix well.

With a spoon, create three holes in the dry mix. Pour 2 tablespoons of oil (canola or soybean oil) into each of the little hole. (6 tablespoons of oil in all). Pour 1 teaspoon of vinegar and 1 cup of cold water into the pan. Mix well but not excessively. If you are mixing with an electric hand mixer, use low speed. If you beat too long, all the air will leave the batter, making the cake un-fluffy. And we all love fluffy cake.

Bake for 30-35 minutes (or until a toothpick comes out clean)

peanut butter smoothie.

This is a smoothie I eat about three times a week. Substitutions are in parentheses.

Blend:
8 ounces rice milk (goat/cow milk, soy milk, almond milk or even coconut milk)
2 TBL peanut butter
1 banana (any fruit which tastes good with cocoa)
2 icecream scoops of Rice Dream ice cream (frozen yogurt, icecream, or add an extra banana)
1 teaspoon cocoa (optional)
2 handfuls of ice

Calorie intake:
8 ounces rice milk: 120 calories, 1g protein, 23g carbohydrate, 10g sugars
2 TBL peanut butter (Adam's No Stir): 210 calories, 7g protein, 6g carbohydrate, 1g sugars, 2g fiber
1 banana: high in potassium, 172 calories, 40g carbohydrate, 3g protein
2 scoops Rice Dream: 140 calories, 23g carbohydrate, 1g protein, 18g sugars
IN ALL:  642 calories, 12g protein, 92g carbohydrate, 29g sugars, 2g fiber

To cut back on carbohydrate intake and increase protein, substitute the ice cream for 1/2 banana, 1 TBL peanut butter, and a handful of ice. And substitute the rice milk for soymilk.

Caution: if you do not like peanut butter in smoothies, you will not like this.

Red Robin.

I found out today that Red Robin will substitute any burger for a veggie burger. So, if you are trapped into going, or you really like their fries, you vegheads need not worry any longer.

Also, I found out after some research that fiber is better for you than carbohydrates. Mostly because carbohydrates are immediate energy, but fiber goes longer and keeps you more filled up.
Some high fiber foods:
Whole grains-- brown rice, barley, corn, whole wheat... etc
Nuts and seeds-- flaxseed, almonds, soynuts...
Fruits-- I find it hard to believe that any fruit is high in fiber, but healthcastle.com says dried fruit, berries, apples with skin, oranges, avocado, kiwi, mango and pear are good.
Vegetables-- dark green leafy vegetables, beans!

Also, calorie intake is important to discuss. It is different from person to person, but this website might be helpful. Just click Continue under the little article.

I reccomend:

Not crushing up vitamins and putting them in smoothies. Just swallow them whole.
I made a rather strange tasting smoothie today, which I drank merely for nutritional value. However, if you do insist, I will share the recipe in a whisper:
(8 ounces of goats milk, a handful of washed carrots, 7-8 frozen strawberries, the juice of a christmas orange, a cut up mango, C D and B vitamins)
